Ugly Sweaters

This past weekend, Patrick and I had an ugly christmas sweater party to attend for Patrick's work party. As we all know, the holidays usually mean lots of yummy foods that have lots of calories in them! Before D-Day, I am striving to maintain my weight through the holidays. This called for working out A LOT last week. Going to the gym everyday bores me unless I really switch it up. I did a lot of circuits last week mixing in some cardio on the elliptical....I only like the elliptical when I have a magazine to read. This week, I had Glamour, Taylor Swift edition, which got me through the whole week (I actually read quicker than that...It's hard to read while you bouncing up and down). I didn't have much time on Saturday, which called for a quick workout with calorie-torching capabilities.

Before the party, I did a 30 minute sprint set on the treadmill:

After that, Patrick and I adorned out sweaters, and I put on my antlers and light up nose. We wanted to help the guys out hosting the party, so we made a few goodies including: an assortment of cookies, caramel crack corn, bacon-wrapped potato bites, pizza puffs, and buffalo chicken wraps. The buffalo chicken wraps were so delicious, I wanted to share the recipe! These are about 100 calories per roll (not including any dipping sauce...that's a choice YOU have to make).

Buffalo Chicken Wraps

Whatcha need:
-3 boneless skinless chicken breasts
-1 bottle of Frank's Red Hot sauce
-bleu cheese
-1 pack of egg rolls wrappers (these are found in the produce department)
-1 package of broccoli slaw

Whatcha gotta do:

1. Wash your hands! (Sorry, that's the nurse in me) Place the chicken in a large pot and pour in enough water to cover the chicken breasts plus one inch above the chicken. Place this over high heat and boil the water and chicken, skimming some of the foam off the top of the water periodically. Depending on the size of the breasts (baha), it takes about 20 min to cook. Just check the chicken and make sure it's not pink. Let the chicken cool on a clean surface.




2. While the chicken is cooling, set out your egg roll wrappers and get your other ingredients ready to make a sort of station. You could preheat the oven to 400 now, too. 


3. Shred the chicken with your fingers and put in a large mixing bowl. Add the hot sauce and stir. How much hot sauce you add depends on how much heat you like. I used about half a bottle and wished I had used more! I like SPICY! 



4. Place 2 Tbsp of chicken mix on a diagonal of the wrapper. Put some broccoli slaw on top of that and then about 1 Tbsp of the bleu cheese. 





5. Wrap them up! 



                                             

6. They go in the oven for about 20 min. Remove and dip in whatever you normally like your waaaaangs with! We used ranch, which was very delicious. 

Now, I had so much fun at the party, that I only got one! They were gone before I knew it. They're just so easy and so yummmmy! Patrick and I had a great time at the party. If you ask a few of my friends to whom I made phone calls...I had a little TOO much fun.
