It's the Final Countdown...



Hello, all! It's been awhile since I posted, but 'tis the nature of the holidays.

Trust, Patrick and I ate waaaaaay too many goodies over the past week. We did manage to do a bootcamp on Christmas Eve, but it wasn't NEARLY enough to curb the amount of calories we consumed that night. My family's tradition is to make a bunch of hors d'oeuvres. This year truly did not disappoint. Patrick and I made our buffalo chicken wraps and some bacon-wrapped stuffed mushrooms. My sister Jody made crab cakes, Elise made a chicken salad and jalepeno popper dip, Peter made two kinds of fondue, Kalee made little portabello mushroom pizzas. The drink of the night was my special creation: the Poinsettia...a delightful mix of champagne and vodka with a splash of cranberry juice and a cherry to garnish. Christmas day included a trip to Green Bay where we pretty much grazed throughout the day. Sloppy Joe's, mashed potatoes, coffee cake, christmas cookies... And everything was consumed all. day. long.

And the rest of the week was pretty much the same. I managed a small, 20 minute workout on Saturday.

The Holidays are over, time to look forward to the New Year and the wedding is 9 months and 4 days away!

As Patrick and I prepare for tomorrow, D-Day (Diet Doomsday), we did some much-needed healthy grocery shopping. We are filled up on fresh fruits and vegetables (including a coconut!), got some healthy dairy products (think cottage cheese, milk, and yogurt), and the ingredients for 2 Weight Watcher meals: Skillet Beef and Beer Stew and Hawaiian Curried Chicken with Pineapple Salsa.

Today, we're going all out. We got Alterra breakfast...

I had left-over chicken parmesan for lunch at work and now Ian's pizza tonight as we watch the re-run of the ball dropping in Times Square.






Tomorrow is our weigh-in. We're totally ready to be humbled and completely 
disgusted with ourselves. Happy New Year!

Ugly Sweaters

This past weekend, Patrick and I had an ugly christmas sweater party to attend for Patrick's work party. As we all know, the holidays usually mean lots of yummy foods that have lots of calories in them! Before D-Day, I am striving to maintain my weight through the holidays. This called for working out A LOT last week. Going to the gym everyday bores me unless I really switch it up. I did a lot of circuits last week mixing in some cardio on the elliptical....I only like the elliptical when I have a magazine to read. This week, I had Glamour, Taylor Swift edition, which got me through the whole week (I actually read quicker than that...It's hard to read while you bouncing up and down). I didn't have much time on Saturday, which called for a quick workout with calorie-torching capabilities.

Before the party, I did a 30 minute sprint set on the treadmill:

After that, Patrick and I adorned out sweaters, and I put on my antlers and light up nose. We wanted to help the guys out hosting the party, so we made a few goodies including: an assortment of cookies, caramel crack corn, bacon-wrapped potato bites, pizza puffs, and buffalo chicken wraps. The buffalo chicken wraps were so delicious, I wanted to share the recipe! These are about 100 calories per roll (not including any dipping sauce...that's a choice YOU have to make).

Buffalo Chicken Wraps

Whatcha need:
-3 boneless skinless chicken breasts
-1 bottle of Frank's Red Hot sauce
-bleu cheese
-1 pack of egg rolls wrappers (these are found in the produce department)
-1 package of broccoli slaw

Whatcha gotta do:

1. Wash your hands! (Sorry, that's the nurse in me) Place the chicken in a large pot and pour in enough water to cover the chicken breasts plus one inch above the chicken. Place this over high heat and boil the water and chicken, skimming some of the foam off the top of the water periodically. Depending on the size of the breasts (baha), it takes about 20 min to cook. Just check the chicken and make sure it's not pink. Let the chicken cool on a clean surface.




2. While the chicken is cooling, set out your egg roll wrappers and get your other ingredients ready to make a sort of station. You could preheat the oven to 400 now, too. 


3. Shred the chicken with your fingers and put in a large mixing bowl. Add the hot sauce and stir. How much hot sauce you add depends on how much heat you like. I used about half a bottle and wished I had used more! I like SPICY! 



4. Place 2 Tbsp of chicken mix on a diagonal of the wrapper. Put some broccoli slaw on top of that and then about 1 Tbsp of the bleu cheese. 





5. Wrap them up! 



                                             

6. They go in the oven for about 20 min. Remove and dip in whatever you normally like your waaaaangs with! We used ranch, which was very delicious. 

Now, I had so much fun at the party, that I only got one! They were gone before I knew it. They're just so easy and so yummmmy! Patrick and I had a great time at the party. If you ask a few of my friends to whom I made phone calls...I had a little TOO much fun.

The Naughty List




While I'm thinking about all the changes I'm going to have to make over the next year, I can't help but think of the food I love...a little too much. I have found that I LIKE a lot of healthy foods, so at least that's okay, but I LOVE a lot of not-so-healthy food. And, usually, I'm loving on this food in too-large of portions.  Like, Buca's is apparently "family style" or something....


1. Coffee. Honestly, on my weight loss trail, I'm glad I don't have to boot coffee.  Coffee has almost 0 calories and I just drink it black. Every morning. About 4-6 cups. I go to Alterra every few weeks and get whatever their signature blend is at the time (just finished off Turkey Trot, now onto Snow Day). Sure, everyone can tell me what caffeine does to my body over time, yada yada. I love coffee. I'm not willing to give it up. And I rarely rarely drink soda. So there.

2. Potato Chips. I don't need dip. Krunchers Jalepeno chips are, by a landslide, my favorite potato chip, but I love a good Ruffle or Lay as well. The problem is I don't eat just a potato chip. I eat many.

3. Pasta. Should I just make this one carbs in general?? Every year for my birthday, I request spaghetti and meatballs with garlic bread. I love love love pasta. This love developed early on in my life, but really blossomed when my parents' next door neighbor, who is a caterer, taught me how to MAKE pasta. Real, delicious, fresh pasta. It took us all day to make some fettucini noodles, butternut squash ravioli, and gnocchi, but it was the best pasta I've ever had. Good pasta makes the dish.

4. Hamburgers. Specifically cheeseburgers...with all the works. About a year ago, I started thinking of doing a blog and almost started one on finding the best burger in Milwaukee. That's how much I love burgers. A good, medium cooked hunk of meat with thick drippy cheddar (or pepper jack) cheese, jalepenos, mushrooms, onions, and bacon between two freshly baked soft, but perhaps a little crispy on the outside buns. Top it off with ketchup and mustard (and sometimes mayo) and I'm allllllll set. Some sort of special fry on the side? Sweet potato? Truffle? Garlic parmesan? Waffle? I don't discriminate and I'll eat myself sick.

         the top of the bun. Are you disgusted yet? I'll have you know this was even a 
little too much for me! 

5. Wine. Patrick and I, I guess, consider ourselves winos. We went to Napa Valley in the spring and had far too good of a time. Make no mistake, I know that my palette is not incredibly discerning, and I wouldn't know a "good" bottle of wine if it smacked me on the head. I enjoy my "2-buck-chuck" as much as whatever beautiful bottle my parents have opened from their cellar. Right now I know I like wine. I like dryer wine. I usually prefer red, but not always. And I'm not entirely sure how pairings work.

6. Cheese. Pretty standard in the Dairy State. Love me some good cheddar with the aforementioned glass of wine. I love trying out different hard cheeses with fun new fruit combinations. I also love soft cheese (read: Brie), especially when it's baked into a puff pastry with some sort of jam involved....Also, I love cottage cheese.

7. New things. This is definitely a vice at times, but it may also be a good thing (a virtue?). I can't not try something new. Perhaps it's because my mother operated under the condition that you had to eat what she made or be hungry. Now, I think we all know by now I am not the type of person who would ever let herself go hungry (is this genetic? maybe I should go hungry once!), so I usually ate what was in front of me. And, as my mother is an excellent cook, I was rarely disappointed. This has made me willing to try things and subsequently eat all of it. Which is good sometimes and bad other times. Like at the state fair. An oreo? Breaded in a sweet delicious dough? Deep fried? Then sprinkled with powdered sugar? Sounds awesome. I will try a whole bag, thanks. Some might think, "Ew, deep fried oreos? Does she try anything that does not involve oil and or butter?" Well, I would tell you that it's my ability to try new things that has made me love oysters (and any seafood).

Now that I've spoken to all the naughty foods that I love, I'll be the first to admit I don't want to give them up. And Weight Watchers assures me I don't have to give them all up. I can have them in moderation (a very foreign concept to me). So this year will definitely test my will-power and I believe my vice of trying new things will come in handy. Apparently there are healthy versions of things I love out there. Except wine. I'm not sure there's a substitute for that....Apparently there's something out there called a "serving size"?

Very Hungry Caterpillar


Hello, all! I'm Margaret and I'm a girl on a weight loss journey for overall health, but mainly for my wedding in October.

I'm the type of person who has struggled with weight most of my life, mainly because I love love LOVE to eat...and I love to eat almost everything. My eating habits are not unlike the hungry caterpillar in that I eat random things and a lot of it. I get home from work, open the fridge annnnd have a bite of cottage cheese here, a couple of grapes there, a pickle slice, some string and finish off with an oreo ball (or 2...) I made earlier in the week. Anyone who knows anything about dieting knows that these habits, over time, equal weight GAIN, not weight loss.
I've decided to embark on Weight Watchers. I've chosen this because I've done it before and I like it the most of all the fad diets I've tried. Cooking is a comfort to me; I love chopping and slicing and trying new recipes, and Weight Watchers allows me to do that.

So I'm starting this little project on January 1st (how original!) I'm going to weigh in every week and take my measurements with a no-holds barred attitude. I'll record my workouts and food intake. I'm hoping my journey can inspire a few others, but I'm mainly doing this blog to keep myself on track.

Until the magic day, I'm going to post some of the naughty holiday foods Patrick (my very supportive and handsome betrothed) eat and make.
